As for the equipment, I advise in FRUGAL RAW! how to best prep foods when using a standard blender or small food processor for those who don't own a vitamix or high-end fp.
On the dehydrator issue, only 24 of the 113 recipes call for the use of one. Seven of those could also stop at the marinating.
There is a way to use a standard oven in lieu of a dehydrator. Basically, you heat your oven to the lowest temp and then put the food in and turn off the oven. When the oven cools, turn it back on and do the same cycle over again and again until the food has gotten to your desired doneness:)
Look at the post of my e-book's contents, and you'll see the symbol [d] by dehydrator recipes, and [d*] by those that are considered dehydrator optional.

You say you are a Certified Raw Chef? Where did you go? I am curious because I've been thinking about it too and need all the info to give DH so he can "think" about it.

I am certified through Alissa Cohen:) There are a number of raw certifications available out there - email me, and let me know where you are so I can direct you better!
On that same note - with raw certifications, people don't usually just stop at one. I'm going for another in the coming months down in Georgia by someone who recently trained under a Culinarary-trained Chef that now does raw up in Chicago. We're EVERYWHERE! LOL!!
First of all, I ordered your ebook and am in LOVE with it! I can't wait to start experimenting. I really think I will buy a dehydrator.
I have a question about frozen vegetables. Aren't they blanched in boiling water before freezing? Is there controversy in the raw community about using them?
I sooo want to try the corn chips and the mattar paneer... I especially like that the corn chips don't contain as much fat as many of the chip/bread type of raw recipes I've seen out there..

I am so happy that you are pleased! I look forward to your feedback on the recipes:) On your question about frozen veggies, yes, some are blanched, and therefore not 100% raw, so a purist wouldn't use them, but there are many who do, and do so because of the texture/taste affect of using the fresh corn vs. the frozen. The enchiladas are best served by the frozen corn because it's wetter and slightly less starchy than is fresh. Fresh can be used in the recipe if the person prefers to stay pure. The corn chips can be done either way as well. This summer, when in season corn is available, I'll be using loads of it! (I plan on growing my own this year - in red and blue varieties!)
You are going to LOVE uncooking! You're so right about this being a whole new dimension - I have been amazed at how easy it is to mimic cooked food dishes, and in many cases how much better they are!
Raw foods have so much more charater and flavor than do cooked foods. You're really going to be amazed!
I became a fan of your food on the ppk. For the most part, I have been rather unimpressed with raw food recipes and the cost associated. I am a food person and I know my way around the kitchen but many of the raw cookbooks I have perused make the raw lifestyle seem virtually unattainable. Your food renews my interest in raw foodism and makes it all seem possible and attractive. I am really excited to see that your book is out. I can't wait until I can afford to buy a copy! I know you must get this all the time but you are truly inspirational.
